Transpiration or moisture loss from fruits and vegetables in refrigerated storage is a major factor involved in loss of salable weight. The factors affecting transpiration have been identified and discussed in a literature review (TRP-172), sponsored by T.C. 11.5, ASHRAE (Sastry et. al., 1978). Since that time another research project (TRP-370) has been funded, for determining transpiration coefficients of fruits and vegetables in refrigerated storage. Such data would provide a valuable base for more efficient design of refrigerated storage facilities.
